Chucumber
Ingredients

2 red onions, finely chopped

4 small cucumbers, finely chopped

1 cup tomatoes, finely chopped

6 tablespoons cilantro, finely chopped

2 red chiles, finely chopped

2 green chiles, finely chopped

3 tablespoons lemon juice

2 teaspoons oil

1 1/2 cups raw peanuts, roughly chopped

2 teaspoons salt

1 teaspoon black pepper

3 teaspoons chaat masala
Method

Stir together onion, cus, tomatoes, cilantro, chiles and lemon juice.

Sitr fry the peanuts in a wok over high heat with oil and salt. Fry for 1 minute. Sprinkle with the pepper and chaat masala and stir. Fry for 2 minutes and remove and add to onion mixture. Season with salt to taste just before serving (to keep the vegetables from releasing too much juice).
