Vegan Pumpkin Pie
Ingredients
- 3 cups mashed packed pumpkin
- 1 1/2 pounds firm tofu
- 1 cup maple syrup
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1 1/2 teaspoons ground cinnamon
- 3/4 teaspoon salt
- 2 unbaked pie crusts
Method
- Combine all ingredients in a food processor. If it seems thick, add 1-3 tablespoons of water.
Notes
