Granola
Ingredients

2 tablespoons canola oil

5 cups oatmeal, old-fashioned rolled oats

3 tablespoons wheat germ, toasted

3/4 cup walnuts, toasted and chopped

1 cup apple cider

1/3 cup maple syrup, pure

1 1/2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1 teaspoon kosher salt

1 teaspoon vanilla

1 cup raisins
Method

Preheat the oven to 300F. Lightly spray with oil to baking pans. Combine the oats wheat germ, walnuts and almonds.

Bring the cider to a boil in a small saucepan and reduce the liquid to about 1/2 cup. Stir in the canola oil, maple syrup, cinnamon, nutmeg, salt and vanilla. Pour the liquid over the oat mixture and stir.

Divide the mixture between the baking sheets and bak until light brown for about 40 minutes. Stir 3 or 4 times during the baking process. Transfer to racks to cool. When cool, place in a large bowl and add the raisins and cranberries. This can be stored in an airtight container at room temperature for about 2 weeks.
