Five Peppercorn Tenderloin of Beef
Ingredients

1 3 1/4 # beef fillet, rolled and barded

3 cloves garlic

2 tablespoons coarsely crushed 5-peppercorn mix

2 sprigs thyme, leaves removed and chopped

Method

1. Preheat oven to 425 F

2. Insert the garlic slivers into slits cut into fillet

3. Pat pepper all over the beef so that it is well coated. Sprinkle with thyme and salt.

4. Place the fillet in a shallow rasting pan and cook for 15 minutes. Reduce the heat to 350F and roast an additional 20 minutes for rare.

5. Let the fillet rest at least 10 minutes before carving.
