Sue Allen's Fruit Tart
Ingredients

1/2 cup butter, softened

1/2 cup granulated sugar

1/8 teaspoon salt

1 egg yolk

1 tablespoon milk

1 teaspoon vanilla

1/2 teaspoon lemon zest

1 1/2 cups flour

Filling:
-
8 ounces cream cheese
-
1/3 cup powdered sugar
-
1/2 teaspoon vanilla
-
1/2 teaspoon lemon juice
-
1/4 teaspoon lemon zest
-
fruit assortment: strawberries,
-
blueberries, kiwi, raspberries
-
apricot or apple jelly glaze, heated and strained jam
Method

Cream together butter sugar and salt. Add egg yolk, milk, vanilla and lemon zest. Mix in flour. Shape into large pizza-like circle on cookie sheet with parchment paper (or on pizza pan). Prick with a fork and bake at 375F for 10 minutes. Remove to rack to cool.

Filling: Mix together rest of ingredients. Spread on cooled crust. Top decoratively with fruit and brush on glaze.
