Sue Allen's Fruit Tart

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/8 teaspoon salt
  • 1 egg yolk
  • 1 tablespoon milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon lemon zest
  • 1 1/2 cups flour
  • Filling:
  • 8 ounces cream cheese
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon lemon zest
  • fruit assortment: strawberries,
  • blueberries, kiwi, raspberries
  • apricot or apple jelly glaze, heated and strained jam

Method

  • Cream together butter sugar and salt. Add egg yolk, milk, vanilla and lemon zest. Mix in flour. Shape into large pizza-like circle on cookie sheet with parchment paper (or on pizza pan). Prick with a fork and bake at 375F for 10 minutes. Remove to rack to cool.
  • Filling: Mix together rest of ingredients. Spread on cooled crust. Top decoratively with fruit and brush on glaze.
