Mexican Tofu Cheese
Ingredients

2 packages soft tofu

1/2 lime, juiced

2 tablespoons fresh cilantro, chopped

1 tablespoon dried Mexican oregano, crushed

1 teaspoon freshly ground cumin, roast whole until fragrant in cast iron pan and grind in spice grinder.

1/2 teaspoon freshly ground coriander, roast whole until fragrant in cast iron pan and grind in spice grinder.

salt to taste
Method

Place crumbled cheese in strainer lined with a large coffee filter. Place over bowl to catch liquid. Place in refrigerator and strain for at least 4 hours.

Place strained tofu into large bowl. Add the rest of the ingredients and taste for correct seasoning.
