Bourbon Barbecue Sauce
Ingredients

2 tablespoons vegetable oil

2 cups finely chopped onions

2 tablespoons garlic, minced

salt and pepper

1/4 cup green bell pepper, finely chopped

2 tablespoons dry mustard, Colman's

1 tablespoon chile powder

1 tablespoon paprika

2 teaspoons cayenne

2 cups ketchup
-
1/4 cup Worcestershire sauce

1/4 cup cider vinegar

2 teaspoons Liquid Barbecue Smoke

1 cup beer
-
1/2 cup bourbon
-
2 teaspoons ground cumin

1/4 cup brown sugar

2 tablespoons molasses

Tabasco sauce, to taste
Method

Combine onions, garlic, s/p, green bells and saute until soft. Add the seasonings and cook to coat the vegetables, about 1 minute. Add the remaining ingredients and blend well. Bring to a boil, turn down to simmer and cook for 25 minutes, until sauce has thickened but can still be poured. Add water, if necessary during the cooking process. Taste for correct salt, pepper and spice.
