Lentil Soup
Ingredients

3 tablespoons olive oil

2 medium onions

2 carrots, cut small cubes

4 tablespoons minced ginger
-
8 cloves garlic

2 teaspoons cumin

1 teaspoon coriander, ground

2 quarts water, approximately

3 16 oz. cans tomatoes, drained, rinsed & chopped

2 cups lentils, picked clean, rinsed

salt to taste

1 lemon, juice of

1 large bunch cilantro, chopped
Method

Saute the onion, carrots, ginger, garlic, cumin, coriander until translucent. Add lentils, tomatoes and water and cook until lentils are soft....for about 45 minutes.

Take out about half of the lentils and puree in blender for food processor. Add back to soup mixture. Correct seasoning with salt and pepper. Add lemon juice. Serve garnished with cilantro.
